Thyme Honey is primarily obtained from the nectar of flowers from species such as Thymus vulgaris and Thymus zygis, collected during late spring and summer in the warm, dry, and limestone areas of the central plateau of Spain.

Aroma: Floral, very intense and persistent, with a distinct phenolic component that gives it a unique personality.

Flavor: Sweet, with clear acidic notes and occasional salty nuances.
Texture and Crystallization: Thanks to its composition and fructose content, its crystallization is slow or minimal, allowing it to maintain a fluid texture for longer (if a more liquid consistency is desired, it can be gently heated in a bain-marie without exceeding 40 °C).
Culinary Uses: Due to its powerful aromatic personality, it is ideal for pairing with red meats, stews, marinades, casseroles, cheeses, or for flavoring oils and vinegars. It is also excellent in pastries with fatty ingredients and beverages.
